Principles of Freeze Drying:

The fundamental principle of vacuum freeze drying relies on the three-state transformation of water, which can exist as a solid, liquid, and gas simultaneously. The triple point of water occurs at a temperature of 0.01℃ and a water vapor pressure of 610.5Pa, where water, ice, and water vapor coexist in equilibrium.

In a high vacuum environment, the sublimation process is employed, allowing the frozen water within pre-frozen materials to directly transition into the ice state without going through the liquid phase. This unique process achieves freeze drying without ice melting.

Characteristics of Freeze-Dried Products:

Freeze-dried products possess a sponge-like texture, experience no shrinkage, exhibit rehydration properties, and retain very low moisture content. When appropriately packaged, they can be stored and transported at room temperature for extended periods.
